Spinach Artichoke Dip

This recipe comes courtesy of one of the administrative assistants at my previous employer. It's fast, simple and loaded with cream cheesel; overall, I found it to be a perfect bring-something-so-you-don't-look-dumb dish. If you want to spice it up a bit, I recommend some Penzy's toasted onion or smoked Spanish paprika. Enjoy!
Ingredients
- 4 packages cream cheese (softened)
- 4 (heaping) tablespoons mayo
- 2 tablespoons minced garlic
- 1 small package of frozen spinach (thawed and drained)
- Dash of garlic salt
- ½ cup grated Parmesan cheese
- 1 can artichokes, chopped
Cooking Directions
- Mix everything together in a large mixing bowl
- Spread evenly in a large casserole dish
- Bake at 350° for 20 to 30 minutes or until hot

For added flair, use freshly grated Parmesan cheese, and increase to 1 cup. Too much cheese is difficult to do.
