Well folks, my cooking skills have expanded once again and entered the realm of seafood. With a little creativity, enough cheese to kill a toddler, and some spare time, Bryan and I used another one of our "NerdCon" Friday nights to whip up an amazing confection of shrimpy goodness that could only have been made better had the shrimp not actually been radioactive crawdads from Lake Manawa. Freshness aside, the whole thing turned out awesome (to say the least). Conversation during the meal was limited to sighs of contentment and mumblings of “Oh my God”.
To begin, we spent a good twenty minutes peeling shrimp and quoting Little Mermaid. We then put the shrimp aside and began work on the fettuccine and homemade al fredo sauce. Below is a breakdown of the recipe we used (sort of).
Ingredients
- 8 Tablespoons of Butter (Real Butter)
- 1 Pint of Heavy Whipping Cream
- 1 Teaspoon of Salt
- ½ Teaspoon of Ground Nutmeg
- 2 Egg Yolks
- 1 Cup of Romano Cheese (Grated)*
- 1 Cup of Parmesan Cheese (Grated)*
Cooking Directions
- Melt butter in saucepan over medium heat.
- Stir in heavy whipping cream.
- Stir in salt, nutmeg, and cheeses.
- Stir constantly until cheese is melted.
- Mix in egg yolks.
- Simmer over medium-low heat for 3 to 5 minutes.
We like to "improvise" when we cook, which usually means uttering phrases like "cheese is like oxygen" and "garlic is the new salt". In other entries, you&quo;ll learn of phrases like "vanilla is like adding goodness" and "I give myself 100 points!".
As for the shrimp, here's a breakdown of how we prepared it:
Ingredients
- 1 Pound of Shrimp (Shelled - Little Mermaid Quotes Optional)
- 1 Onion (Chopped)
- 2 Tablespoons of Garlic (Minced)
- 2 Tablespoons of Olive Oil
- 2 Tablespoons of Butter
- 1 Tablespoon of Lemon Juice
Cooking Directions
- In skillet heat butter and oil over medium heat.
- After butter is melted add garlic and onions; sauté.
- After onions are reduced (aproximately 1 to 1½ minutes), add shrimp; sauté until onions are golden brown and shrimp is pink and starting to brown.
- Pour lemon juice over shrimp
- Serve over futtuccine alfredo.
So the secrets out folks, Levi does in fact know how to cook. Ladies, take a number.
* Remember, we believe that cheese is like oxygen and strongly encourage everyone to "breathe deep". In other words, add cheese to taste (where applicable).
